Your noodles are amazing!!!  I had gastric bypass surgery the end of April, 2009, and, by choice, gave up starches (bread, rice, potatoes and pasta). I have lost over 100 lbs. and plan to stay on track any way I can.  I came upon your website by accident, and the product sounded to good to be true!!!!!  I saw several people cooking with the “noodles” on YouTube, and they seemed to believe in your product, and loved it.  So I figured I’d try…
I purchased the angel hair, just like you suggested.  UNBELIEVABLE!!!  I have simmered them in soup, simmered them in meat sauce, and made noodle pudding (kugel) for my holidays.  I only told my husband what he was eating ONLY AFTER he said how much he loved it!!!!!  He was shocked!!!  My daughter was truly impressed, and also loved it.  As for me, I can have delicious pasta again, and I am absolutely thrilled!!!  My sugar was under 100 the next morning, and that is truly proof enough for me!!!
Thank you in advance for your help.  My “noodles” are almost gone and I would like to put that order in ASAP.

SWEET NOODLE PUDDING (KUGEL) RECIPE

SWEET NOODLE PUDDING (KUGEL) RECIPE

3 bags angel hair Miracle Noodles, rinsed and drained well
1 lb. part skim ricotta cheese
6 eggs
1/2 c splenda
cinnamin to taste (1 - 2 tsp is good for me!)
1 c dried fruit (of your choice) peaches, nectarines, cherries, plums, pluots, etc.
(they can be mixed in your choice of combinations or you can use 1 type)
1 c roasted almonds, ground in food processor
While in colander, cut noodles with sharp knife or food scissors to make them easier to mix with other ingredients.
Place all ingredients in large bowl and mix well with wooden spoon until very well blended.
Pour into well oiled casserole dish (I use canola oil).  Make sure casserole dish is large enough for kugel to.expand (and make room for topping, to follow).
Bake for approx 1 hour to 1 1/4 hours until brown and bubbly.
Take out of oven and add one of the following:
Large jar of no sugar added jelly (like Polaner All-Fruit) or
No sugar added fruit cocktail or peaches; or
1 Jar of no sugar added preserves.
(I try to stay with the similar flavors in and on the kugal)
(For example:  dried cherries in kugel, black cherry All Fruit on top; or
dried peaches, and, nectarines in kugel, and SF peaches with juice on top)
Spread topping all over top of kugel, then place back in oven for approx. 15 minutes  or until bubbly, then serve.
NO ONE WILL EVER KNOW YOU DIDN’T USE “EGG” NOODLES!!!
My husband says the taste is great!!!!  I bet the fettucine noodles would be just as delicious…

Meatloaf with Sweet and Spicy Red Pepper Glaze

Meatloaf

Ingredients

1 pound ground beef
1 package orzo Shirataki pasta
1/2 cup ricotta cheese
1 egg
1/2 cup onion minced
2 cloves garlic crushed and minced
1 Tbs. prepared yellow mustard
2 Tbs. tomato paste
1 Tbs. worcestershire sauce
1/2 tsp. salt
1/4 tsp black pepper
1 tsp. olive oil

Red Pepper Glaze

One medium red bell pepper
1/4 cup chopped onion (sweet onions work best)
1-2 canned jalapeno peppers
1 Tbs. apple cider vinegar
1 clove of garlic crushed and minced
Stevia to taste

Directions

Preheat oven to 350 degrees.  Puree bell pepper, onion, garlic, stevia, and vinegar in a food processor and set aside.  Mix meat, orzo, ricotta, egg, onion, garlic, and spices together.  Grease a bread pan or casserole dish with olive oil and press meat/orzo mixture evenly into the pan.  Top with red pepper mixture and bake at 350 degrees for sixty minutes.

Variations:  Add minced jalapenos, red pepper flakes or a pinch of cayenne pepper to the meat mixture for extra heat and spice.  Add a Tbs. of Italian herbs or 1/4 cup of drained salsa to th meat mixture for extra flavor.  Add 1/2 cup vegetable pulp from juicing for extra nutrition and flavor.

Many thanks for your wonderful product, which I will return using as we head into fall. I lost 20 lbs so easily this past year using the noodles and Konjac flour and I will look forward to deliciously losing another 15 in the coming months.

Breakfast Cereal

1 pack Miracle Mini Pearls - 0 cals
1 pack plain instant oatmeal  - 103 cals
I Can’t Believe it’s Not Butter Spray - 0 cals
Walden Farms pancake syrup - 0 cals
1 tbs “Thicken” - 15 cals (optional)
Torani Brown Sugar & Cinnamon syrup - 0 cals
2 tbs Half and Half - 35 cals
2 tbs Fat Free Redi Wip - 5 cals

Wash and strain Pearls.  Heat up in saucepan to reduce water.  Cook oatmeal in microwave with 3/4 cup water for one minute.

Add to food processor and start.  Add remaining ingredients.

Total - 158

Love the noodles!

Thank you.  I just wanted to say that I love the noodles.  I open six packs of noodles and place each in a storage bowl.  I make one package of Knorr sauce mix by their directions.  About two tablespoons of sauce in each bowl works out perfectly and I store them in the fridge till needed.  I have a quick lunch on demand.  I have lost 15 lbs. since Christmas.  Yeah!  - Joy
