 Post subject: Chicken Lo Shirataki (Mein)

A variation of a Chinese favorite!

You will need:
2 bags Shirataki noodles (I use the angel hair)
3 lean chicken cutlets (cut into strips)
1/4 cup julienned carrots
1/4 cup julienned zucchini
1/2 cup sliced shitake mushrooms
1 cup Chinese frozen mixed vegetables
1/4 cup reduced sodium soy sauce
1 tbsp. cornstarch
2 tsp. low sodium powdered broth
2 packets Splenda
Pam cooking spray

Directions:
Prepare noodles.
Combine soy sauce, cornstarch, broth, and Splenda with 1/2 cup of hot water. Stir well.
Bring a large pan or a wok sprayed with Pam to medium-high heat.
Add chicken and all vegetables.
Stir frequently and cook for 5 - 7 minutes.
Pour sauce into pan and stir.
Cook until sauce has thickened.
Add noodles, and cook until entire dish is heated through and mixed well.
