Miracle Noodle Chocolate Mousse with Salt Caramel Walnuts - Recipe Contest Winner

Ingredients: 
  • 1 package (7 oz.) Miracle Noodles, Angel Hair 

  • 1 package (3.5 oz.) Dark chocolate bar (I used 72% cacao), cut into pieces 

  • 4 tablespoons Milk 

  • 2 tablespoons Granulated sugar 

  • 1/4 cup Chopped walnuts 

  • 1/6 cup Light brown sugar 

  • 1.5 tablespoons Water 

  • 1/16 teaspoon Salt Whipped cream for serving (optional) 

*Judges note, for a delicious dessert lower in carbs, you can substitute organic stevia for the sugars*

Directions: 
    1. Cook miracle noodles following the package directions. After cooking in boiling water for 2 minutes, drain miracle noodles in a colander then transfer into a blender and puree the noodles.

    2. In a heatproof bowl set over a pot of simmering water, put dark chocolate pieces, milk and granulated sugar. Stir until chocolate is melted and smooth.

    3. Remove the excess water from the pureed miracle noodles and put into the chocolate mixture bowl and mix to combine.

    4. Put the mixture into 2 serving bowls equally and refrigerate until set (40-45 minutes at least).

    5. In the meantime, make salt caramel walnuts. In a saucepan, put brown sugar and water. Turn on the heat to medium. (Don’t stir) When the sugar is dissolved and big bubbles appear, shake the saucepan frequently and cook until the savory nutty flavor brings out. Remove the saucepan from the heat and stir in salt and walnuts until well coated. Let cool. 

    6. When the miracle noodle chocolate mousse have set, remove the mousse from the refrigerator, put the salt caramel walnuts over the top of each mousse equally. Top with whipped cream if you wish.
