I have been buying the tofu shiritaki noodles and I found the Miracle Noodles by far are much better! I like the fact that they are clear as opposed to a whitish color . . . .And best of all they are all fiber, so they are really calorie free , AMAZING! A dinner that is filling and no calories. Lately I have been using Walden Farms calorie free marinara sauce on them and other times I just season them with spices, or add them to a broth. They can be used any way you like and keep the flavor of what you do to them great. I found that the angel hair is my favorite.. Overall, Miracle Noodles are the best pasta I have found and am a big fan and will continue to buy them for a long, long time.

I am very impressed with the noodles. So far I have added them to homemade vegetable soup and used with Marinara sauce, both were great tasting and very filling. I find that I don't want more than a half a package at the most in a day. and I am not as hungry the rest of the day and in the evening. I don't think I can rave enough about these noodles. Not only are they a delicious daily meal for me, but they have really helped me kick the plateau on my weight loss. Miracle Noodle has been a wonderful resource for me --it's a way to have a comfort food experience without triggering addictive behavior. This past week I made an organic tomato spaghetti sauce with lots of veggies and simmered miracle noodles and brocolli in the sauce and added some parmesan cheese on top when serving. It was satisfying, delicious, and healthy. This week I am making a tofu, veggie stir fry and using Miracle Noodles instead of rice. I'm looking forward to ordering Miracle Noodles again- I think this time I'll try the black noodles....

Besides the color (more light brown than black) that makes for great contrast when mixed with the white, the great advantage to this shirataki noodle over the others is its ability to hold onto sauce better than regular angel hair.

It is made of the unrefined Yam Flour from the konnyaku imo tuber, the same as traditional shirataki and a very small amount of hijiki (a japanese sea vegetable) is added.

How to use Konjac Glucomannan flour

Use it as a thickener as you would corn starch, one teaspoon acts more like 10 teaspoons of corn starch.

Add to gravy or soup or cooking sauces as a thickening agent without calories, without carbs, just added soluble fiber which your body needs. The question is why would you ever use corn starch again when you can use Konjac Glucomannan flour and get added fiber without any carb addition.

When baking bread or cookies, add one teaspoon of Konjac Glucomannan flour to 2 cups wheat flour.

Or dissolve in water to use as a fiber supplement.

Susan uses the mini-pearls almost exclusively in soups. In fact, I don't think there is a soup she has made in the last year that doesn't have mini-pearls in them.

It is almost like adding a vegetable to the soup since it provides a lot of bulk and fills you up quick.

How to use the Orzo Pasta.

Andrea uses the orzo in soups as well but more as a rice substitute. For example she makes a mean chicken and rice soup but uses the orzo instead of the rice.

Susan uses the orzo as a bed for her salmon or chicken. So, she will prepare the chicken or salmon usually baked or broiled then placed on top of the orzo.

As for me, I mix it with my homemade chili. This recipe is not available for distribution, I need to keep my secret recipe!:)

How to Use Kanten (Agar-Agar)

THE healthy and vegan alternative to commercial animal or chemical derived gelatins.

It is made of a sea vegetable that has been freeze dried and has no discernable flavor.

Andrea is the dessert expert in our ranks and she has taken to Kanten like a bee to honey. Andrea uses kanten to thicken her fruit aspics, custards and pie fillings.

Andrea makes a pomegranate and pear aspic that is divine. Break one bar into pieces and place in 3 cups of water or juice. Bring to a boil without a lid, stirring occasionally. Reduce the flame to low and simmer for 15 minutes until dissolved. Add the pomegranate juice and add thinly sliced pears, cook for 3 to 4 minutes until tender and pour into a mold. Put aside to gel for 60 minutes or refrigerate to speed gelling.

How to use the Rigatoni

The thicker the shirataki noodle the tougher the consistency. As such, Susan here at MiracleNoodle uses them as a substitute in her favorite Calamari recipes. Here is her favorite :

Shirataki Rigatoni MARINARA

1-2 bags rigatoni rinsed and cut into rings
1/4 cup Olive oil
3 Cloves garlic, minced
1/2 cup Onion- chopped fine
10 black olives-sliced
2 tbls.of raisins (optional)
1 tbl. of pignoli nuts
1/4 cup Parsley, chopped
2 tablespoons fresh basil, chopped
1/4 cup dry White wine
1 can of crushed tomatoes
2tbls.of basil
salt,and pepper

1.Heat oil and saute garlic and onions until browned
2.Add tomatoes,basil,parsley,salt,and pepper/simmer sauce for 45 minutes
3. Add raisins,olives,and pignolis,and cook for ten minutes/
4. Add rigatoni until it reaches the temperature of the sauce
